Steak Lettuce Wraps! AMAZING!!

21 Day Fix Extreme Recipe: Chicken Fajitas

I made this recipe for dinner today! It for sure is my favorite recipe! I normally eat my tacos with tortillas, but I did not miss them at all! Lettuce wraps are my new favorite way to eat tacos!! Best part is this is an amazing meal that is super healthy! I am not on a diet, I am learning how to live a healthy lifestyle!!

I have officially completed one week of the 21 Day Fix Extreme! And I must say, my muscles have been sore in places I didn’t even know existed before I did this program!!! I am really loving the workouts though, they really push me past my comfort zone. But hey, I’m not complaining, because when my muscles are sore, I know that my body is getting stronger and working hard.

As for the nutrition on the 21 Day Fix Extreme, I am pleasantly surprised yet again!!! Here I was thinking that I was going to be hungry all the time, and cravings some serious carbs, but instead, I feel just right and completely satisfied every single day! All I do is eat!! I love the recipes that come with the nutrition guide. There are so many you can try, and I’ve been making a lot of them! Honestly, I have yet to find one I don’t love. My next recipe I am so excited to try is Hearty Beef and Butternut Squash Stew!!


21 day fix

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 4 servings

Serving Size: 2 fajitas


  • 1 tsp chili powder
  • 1/2 tsp Himalayan salt (or regular sea salt)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 2 tsp olive oil, divided
  • 4 (5- to 6-oz) raw chicken breasts, boneless, skinless, cut into 1/2-inch strips
  • 1 red (or green) bell pepper, cut into thin strips
  • 1 onion, thinly sliced
  • 1 Tbsp fresh lime juice
  • 8 large romaine (or butter) lettuce leaves
  • 1/2 medium avocado, thinly sliced
  • 1 cup fresh salsa


  1. Combine chili powder, salt, cumin, garlic powder, and 1 tsp oil in a large resealable plastic bag.
  2. Add chicken, bell pepper, and onion; mix gently to coat. Refrigerate for 15 minutes.
  3. Heat remaining oil in a large nonstick skillet over medium-high heat.
  4. Empty contents of bag into skillet; cook stirring frequently, for 5-6 minutes, or until chicken is cooked through. Remove from heat and add lime juice.
  5. Evenly top lettuce leaves with chicken mixture, avocado, and salsa.
